coming soon - bailey's irish cream chocolate mousse cheesecake

The name may not roll of the tongue but I can assure you that it tastes just as good as it professes to be. Think of this Irish inspired creation as the love child between a cheesecake, a chocolate mousse, and Bailey's. That's right, we went there. So it wasn't the easiest thing to make but it was certainly worth it. This light creamy cheesecake was absolutely delicious spiked with Bailey's, but the star of the show, I think, was the chocolate mousse.
