5 minute weeknight alfredo sauce!


Not only should everyone have a quick and easy, go-to, weeknight recipe, but it should be something delicious and not something that comes from a can, bag, cup, or liquor store. Don't deny it. It's close to your house and they have occasionally good sales on stale cookies and offbrand colas. But, that is all in the past, today I'm going to show you how to make a weeknight alfredo sauce which has been rumoured to cure everything from marriages to cancer. However, rumours are rumours and if those claims turn out to be false, rest assured you still have a killer sauce that you can drown pasta and rice in for a quick and easy weeknight dinner. 


Oh, and did I mention this recipe has 50% less heavy cream and 75% less butter than its predecessors. So yeah, it does cure cancer.

portuguese egg custard tarts - macau in a tartshell


Did you know that the island of Macau got it's name because the Macanese fisherman couldn't understand a certain Portuguese conquistador's accent. Now, that may seem like a completely arbitrary statement, unless, you are privy to the fact that I just came back from Macau last week. Sorry, after a sixteen hour jet lag my mind isn't working correctly and my twisted sense of humor seems funnier in my head. Although the fisherman thing was really true. Our tour guide said so.



Across the waters from Hong Kong is the exotic casino and custard tart filled island of Macau. And despite the fact that my attempt at these pastry pools of custard gold turned out surprisingly well, especially for a first attempt, it really doesn't beat the fresh piping hot tarts you get halfway across the world. no-bake caramel reese's peanut butter cups


Not a lot of us like preparing huge Thanksgiving meals. In fact, in a study I just made up, that is the number one reason why people make friends at all, so they can crash their friends' Thanksgiving dinners. But you can't go to your friend's mother's house and expect to get a meal without bringing her a gift. That's where these no-bake, super quick and easy caramel reese's peanut butter cups come into play. In fact, in another survey I just made up, it takes longer to say the name, than it takes to make the actual recipe.

corn and cranberry pancake cookies - the pancakie revolution has commenced!


Besides the fact that this title has a serious case of alliteration overboard, these pancake cookies were amazing and absolutely delicious! Seeing that this Chow Creation is the convergence of two of my favorite breakfast/dessert items, I couldn't see why this wouldn't be a home run. They are soft and pancake like, but have this buttery crumb like a cookie. It's the perfect breakfast food that everyone is going to go crazy for! Not mention that pairing of the sweet corn (that is right at it's peak season) and those sweet tart cranberries, this is killer! 



Now I know what most of you in the foodieverse must be thinking, is this the new Cronut. Yes, yes it is. In fact, I'm predicting this is going to be even bigger than the cronut because, unlike the Cronut, which is difficult to make and comes in a limited range of flavors, the Pancakie can be made by anyone with a whisk and there's an unlimited array of variations you can create. Soon households all over America will have their favorite Pancakie recipe and then it'll spread to Asia, and then Europe, and I'll be king of the world! ahemmmm...so yeah, Pancakies, they're gonna be huge.

pistachio cherry crumble - let's get crackin'


I'm not sponsored by Wonderful Pistachios nor do I even think they know this blog exists (actually I'm positive they don't), nevertheless this post is going to be me trying my best to get their attention. So let's get crackin' (ohhh...I see what you did there).



If there was an award for biggest pistachio fan, my grandma would win it twice over blindfolded with her hands tied to her back. She is a pistachio fanatic, the quickest pistachio huller I've ever seen. Recently, and by recently I mean a couple hours ago, we bought a 3 pound bag of pistachios and within that time from the car to the house half the bag was gone. Keep in mind that this feat would be impressive for anybody, let alone a small, 80-something year old chinese lady. She pops those quicker than tic-tacs. Sometimes, even two at a time. But in all seriousness my grandma is wonderful...pistachios. Okay even I thought that one was lame, I'm gonna move on to the cooking.

Confession Time ... there were no laboratories, nor any scientific agricultural breakthroughs, simply put no Grapeberry, I lied. I deceited you and since the time I last wrote I have been feeling an excruciating  amount of guilt. It's a good thing I have this cake consoling me, unfeigned in its generosity and care for my situation, lending its moist, fruity, buttery self to my buckleless albatross. Unless...perhaps I did you all a favor. Isn't our world filled with enough sadness. What is this world lacking but a new genetically engineered fruit to keep our fruit bowls and buttermilk buckles exciting...yeah I'm not even going to try. Forgive me? :-)

peanut butter swirled blondies - sweet | salty | creamy


And tilt your head to the right, just a little more...perfect. You'll notice this is the first time in Chow Creations history that the text is slanted in a title picture. I'm trying to stay relatable with the new influx of hipster viewers I'm getting. Hopefully everyone is copacetic (look it up) with the new changes; meet me in the comments.



Blondies are delicious as is in their argent luster. However, if you swirl in some peanut butter you're looking at one satiny, chewy, heavenly hell of a treat. Veins of rich peanut butter course through this dense and chewy bar; adding a salty sweet layer of complexity to this, what would otherwise be, mundane bar.

the best lemon bars in the world - a classic perfected


Lemon Bars are one of those classic desserts you can find in about any of the supermarkets these days. What's different about my lemon bars is they actually taste good. I know, surprising (not the part about my lemon bars tasting good, the part about lemon bars tasting good at all). Sweet without being cloyingly so, buttery without being too rich, and certainly not dense. If I were to use one word to describe these lemon bars it would be, perfect. The dilemma chefs have always had when making lemon bars, was getting a firm enough top, without sacrificing a crispy bottom. With this recipe you won't have to give up any of that. This is the perfect summer dessert, gift, or picnic item for your next special occasion (or just for everyday eating). It's absolute perfection in a bar, so let's get started (before I go off on one of my tangents). Like many of our recipes we'll start with the butter. You want to cut the butter into small chunks and put it on a plate in the freezer to harden. Whenever you're baking, often times the temperature of your butter will dictate the success of whatever you're making. Recipes that call for melted butter (i.e. cookies) are intended to have a chewy outcome. Desserts that require the butter to be cold (i.e. pies, pastries) mean the end product will one of these three, crispy, crunchy, or flaky (it could even be all three, oh my). The more you chow.

chocolate cashew butter - this takes more time explaining than making


Those of you who know me, know that I love desserts disguised as breakfast items. Like coffee cakes, muffins, and danishes. But this Chocolate Cashew Butter is the most incognito of them all. This is like the nutella of kidney shaped nuts. You can market nutella all you want with multigrain bread and floating bubbled nutrition facts. But at the end of the day, all it is is eating chocolate for breakfast. Which is precisely why I love this recipe. It taste similar to nutella, except creamier and nuttier but without all the high fructose corn syrup and artificial additives.

lemon blueberry ricotta pound cake


I made this on Thursday and I s#!t you not when I woke up the next day, the plate was in the sink and all was left were crumbs. The lemon is so fresh and fragrant, being so abundant in this peak lemon picking season. The blueberries are also perfect, juicy and plump studded throughout this moist cake. And we'll talk about this more down below but the ricotta cheese gives this cake such a moistness, which also lets us cut on the butter. Moist, tasty, and low-fat, what more could you ask for. 



Ah, lemon, blueberry, and ricotta, such a classic flavor combination and it works beautifully in this cake. But you may be thinking, cheese in a dessert? Well do you like cannolis? Of course you do, and you can thank the italians for figuring out that ricotta is the secret to creamy, rich, delicious desserts.

flat and chewy chocolate chipped cookies


Stop! Slowly read these next sentences with all your might and attention. This...is...the...best...chocolate...chip...cookie...recipe...in...the...world. Got it? Good. Okay, I think we all know that nothing is better than a freshly baked chocolate chip cookie. Chewy, chocolatey, and warm. Am I right or am I right. But no one likes those doughy dry mounds of crap people call cookies these days. That's why this week I'm bringing back the good ol' days with America's favorite cookie, The Chocolate Chip. 



Howard Taft. I approve of these cookies. In fact my pockets are full of them.

The best types of chocolate chip cookies are the flat and chewy ones. I even prefer them to be slightly bendable. That's the hallmark for a really good choco-chip. Not too sweet, and dotted with chips of chocolate. This recipe is all that and more. If you follow this recipe to the period, I can guarantee that you will be presented with a batch of the most perfect, classic chocolate chip cookies you have ever tasted and or seen. The ones Ben Franklin, and Howard Taft would be proud of. And you can be sure President Taft had a few cookies in his day.

mini blueberry tarts


If you are not reading this on President's Day, please omit the first four sentences, not including this one. Well President's Day is here again. How many of you know why we have that holiday? And you call yourself an American.* Well it doesn't really matter why we celebrate it as to what we'll be doing with it, and you know what I'll be doing, eating Blueberry Tarts. It's true, these tarts are a labor of love. First you have to make a crust, then pastry cream, and then macerate blueberries, it's a lot of work. But it's so worth it. The combination of buttery crust, smooth thick cream and sweet berries, I don't think there is a better pie/tart filling combination. Well tied with bananas and cream and cookies and cream but they're all close firsts. Anyways, besides being super tasty, these aren't half bad to look at either. momma's sour cream cookies - well how i imagined them to be


Despite the title my Mom never made these, but that doesn't mean I can't make them for myself. 



After those Monday Night Football Parties, don't you always have leftover sour cream. Whether it's from that delicious five-layer dip, or those disgusting vegetable platters, I know there will always have extra. And up until now I didn't know what to do with it. Then I thought about cookies, you can make cookies with anything. These cookies are refreshing, simple but delicious and only take a few minutes to prepare, and eat the whole batch. Okay, well I'm not sure about the eating the whole batch part but make them I did, and they did not disappoint. 


strawberry lime oatmeal squares - snack on awesomeness



What's that? I'm sorry, I couldn't hear you over the awesomeness of this dessert. When you take that first bite your teeth barely crush that crisp crunchy crust, however then it sinks into the soft fruity center. Buttery, strawberry-y, and slightly tangy, I don't think there's much more you could ask of this chow-fection. By the way, just to let you all know, in order to even comprehend this post you need to have read my previous post on how to make Lime Curd. That's pretty much the other half of this recipe so head on down there if you do not want to be just half as smart as everyone else. Seriously stop here if you have not read it. I mean it. He said assuming all of you could see his very serious expression.



Okay, so those of you who are left have either done what I've said, or are internet trolls, whoever you are you're definitely in for a treat. I take an easy shortbread crust, heartened with nutty bursts of oats, and layer it with strawberry preserves and lime curd. Absolutely delicious, and not to mention super easy. Seriously, as easy as mixing things in a bowl. So let's get started!

crunchy chewy orange chocolate cookies - happy national cocoa day!

Instead of the traditional single bite shot, I decided to go with the more daring double bite.
As you all know on December 12th it's National Cocoa Day! So in recognition of this truly special food holiday, I decided to make a chow-fection that embodied everything I love about cocoa, while presenting it in a shape we all know and love. Thus the birth of the Crunchy Chewy Orange Chocolate Cookie, and the extra fold in my love handle. But we can work that off later however there's no better excuse to make these cookies other than right now. Using a little bit of my scientific knowledge I was able to combine my two favorite textures to create a cookie unlike any you have ever tried, so stay tuned for the secret shortly. But without further-ado let's get started! 



To begin I'm going to whisk together my All Purpose (AP) flour, my salt, baking powder, and cocoa powder. You don't need to dirty a sifter when whisking proves just as effective.

The holidays lend me so much to be grateful for, my family, good health, and coconut bars! Well, less than good health after you eat them. But isn't that what the holidays are about. We suffer and scrape by on atkins and or weight watchers for the better part of the year just so we can eat chewy coconut bars today. This is a message to every home cook out there. Every time you buy a brownie mix from the supermarket God blinds a puppy. See how cute he is. He can't. 

And why would you ever want to buy a brownie mix when brownies are so easy to make yourself! Who knows what kinds of yucky stuff they put in those mixes and in the end they aren't really worth it. If you want to cut a year off your life don't you want to do it in style. Of course you do, you aren't stupid...or are you?
