pomelo curd crème brûlée


Is it "un-American" to not hand out candy during Halloween? My parents and I wrestled with the idea for a solid 3 minutes before deciding that it wasn't and went to our favorite celebratory restaurant far away from home (just in case the trick-or-treaters followed us). If karma is a thing, it sure hasn't hit me yet because I'm sitting here at my desk with a smile and cup of crème brûlée that I smuggled from the buffet line. 
You know when a crème brûlée is good when it is felony-worthy good. 


And while the crème brûlée I had at the restaurant was the inspiration for this recipe, I didn't want to just copy it. I wanted to make an elevated crème brûlée, one that after your first bite you can't stop eating until all the cows and chickens say enough is enough. The resulting concoction, the convergence of a pumelo sale at the store, my experience at the restaurant, and the all-important cow-chicken factor, was this Pumelo Curd Creme Brulee. No need to thank me. Just enjoy.

mexican chocolate pound cake - minus the mexican chocolate


Chocolate porn. Don't be alarmed. Chow Creations is not yet another food blog to resolve to indecency to increase traffic. We simply listen to our viewers and the viewers say more porn, food porn that is. This week, after being away for quite awhile, I return with a mexican chocolate pound cake. Rich and dense however at the same time somehow fluffy and definitely chocolatey. This cake can certainly be the subject of many ahhh's and ohhh's of the next family gathering or church potluck. 



Despite it's lack of "mexican" chocolate, we make up for it with a heaping dose of cinnamon and many other tasty flavors including coconut, buttermilk, and "american" chocolate. Well I'm not sure if any chocolate is american seeing that they all come from Brazil or Columbia or some place of that nature, but it's certainly a chocolate which has an american stamp of approval seeing that it's fortified with tons of sugar and milk. Plus I'm using chocolate that's in "chip" form and you know americans love their chips.

corn and cranberry pancake cookies - the pancakie revolution has commenced!


Besides the fact that this title has a serious case of alliteration overboard, these pancake cookies were amazing and absolutely delicious! Seeing that this Chow Creation is the convergence of two of my favorite breakfast/dessert items, I couldn't see why this wouldn't be a home run. They are soft and pancake like, but have this buttery crumb like a cookie. It's the perfect breakfast food that everyone is going to go crazy for! Not mention that pairing of the sweet corn (that is right at it's peak season) and those sweet tart cranberries, this is killer! 



Now I know what most of you in the foodieverse must be thinking, is this the new Cronut. Yes, yes it is. In fact, I'm predicting this is going to be even bigger than the cronut because, unlike the Cronut, which is difficult to make and comes in a limited range of flavors, the Pancakie can be made by anyone with a whisk and there's an unlimited array of variations you can create. Soon households all over America will have their favorite Pancakie recipe and then it'll spread to Asia, and then Europe, and I'll be king of the world! ahemmmm...so yeah, Pancakies, they're gonna be huge.

coconut rice pudding - spring break partying pudding style


This week I have for ya'll a delicious Coconut Rice Pudding, the easiest, creamiest, smoothest rice pudding you have ever had, or in this case, read about and saw in pictures. Originally I was going to make something rose infused or scented, but then I got attacked by a colony of spiders living inside my roses. So that can happen. Anyways, that's why this week instead of drawing inspiration from the garden-y, flower-y aspect of spring, I thought about Spring Break. And what food item do you think of first when I say Spring Break. Pina Coladas. I know it's a drink, but you haven't seen those college students, Pina Coladas are spring breakers substinance for an entire week. So long story short, instead of partying I'm making rice pudding. I know, ya'll are the ones missing out.



Rice pudding is a very easy dessert to make. There isn't much skill involved with it and you can make it any flavor you want it to be. This week, I'll be showing you the base of a rice pudding and how you can spike it with a burst of tropical flavors like pineapple and coconut, maybe a little rum if you want but we'll talk about that more later. First things first we need to prepare our rice.

lime curd - easy peasy lime...wait


What do you do when you're mom's co-worker gives you a bag of limes? You cannot make the proverbial lemonade, but you can make this delicious chow-fection! Perfect for filling pies, or even breakfast with toast, this lime curd sure does it all. Did I mention it was easy too. You don't need any fancy equipment, nor do you need to be a very good chef either. If you can follow directions you can make this crud...I mean curd. You don't know how many times I'm going to make that mistake in this blog. This curd has a pudding-like consistency with a light lime flavor. Absolutely deliciouso. To begin I'm going to separate two yolks and two eggs into a small bowl. Please do not throw those whites away. Every time you waste your whites a whale from Wisconsin wallows. I'm not sure if that made much sense but the alliteration was very satisfying. The point is you can use those whites for macarons, or even a breakfast omelet.
